This book is a collection of my everyday dishes of meat and vegetables that are delicious to eat, especially with boiled rice. They are made with only a handful of ingredients and herbs, which are nowadays readily available in all the major supermarkets, such as tomatoes, garlic, onions, parsley, thyme and chillies used in the Creole dishes; curry powder, coriander leaves, saffron strands, turmeric powder, mint leaves in the Indian dishes; and soya sauce, potato flour, cornflour, spring onions, ginger roots, rice wine, lemon juice and black bean sauce in the Chinese dishes.
They are easy and quick to cook, typically about 30 minutes to 1 hour, including preparation time. The ingredients in any of the recipes could be varied according to individual taste and items available. The recipes could be viewed as an example from which you can create your own dishes. In fact, I am often told that my dishes never taste quite the same as the last time. A subtle modification, even in the quality and quantity of the ingredients used, would change the overall taste of a recipe, thus adding interest and avoiding boredom and monotony. Every meal could become an adventure in the kitchen.
